This is an opportunity for an ambitious, driven and qualified Chef to become the Head Chef at a prestigious restaurant on a wine farm in the Stellenbosch area. The Head Chef is responsible for managing all aspects of the kitchen to ensure customers receive an exceptional culinary experience. Duties include innovative and creative menu design and food preparation, cost control, housekeeping, health and safety, quality control and team management. This position will report directly to the General Manager Hospitality (GMH).

Menu Design and Delivery

  • Develop menus for the restaurant and events in line with the company’s “farm to table” philosophy, taking into account how the food will be complemented by the wine collection
  • Design standardised food preparation and presentation guidelines for each dish
  • Control and direct the food preparation process 
  • Monitor the quality of dishes before they are presented to customers
  • Stay current on developing trends in the restaurant industry 

Budget Management

  • Prepare and monitor the annual kitchen budget
  • Manage the daily costs of the kitchen and prepare a weekly management report for presentation to the GMH
  • Monitor stock levels and purchase equipment and supplies approved vendors
  • Minimise wastage by careful supervision of food preparation methods
  • Prevent food loss by utilising proper hygienic storage methods 

Employee Management

  • Foster a climate of cooperation and respect between colleagues 
  • Hire, manage and train kitchen employees
  • Direct and oversee the work of employees
  • Maintain records of payroll and attendance

Compliance and Maintenance

  • Comply with nutrition and sanitation regulations and safety standards
  • Monitor the state of kitchen equipment, report any maintenance issues to the GMH

Relationship Management

  • Collaborate effectively with Front of House to build and maintain the brand
