Purpose: The purpose of this position is to have good quality control measures in place in Worcester regarding the storage of raw products and spirits as well as the distillation of this to its final product form to ensure constant quality standard to customer requirement. The incumbent needs to ensure checks and balances are done during the distillation process and report accordingly. The incumbent manages the day to day cellar activities, processes and human resource functions for the distillation areas. The incumbent is responsible for and will continually strive to ensure that only food safe, quality products and services, that meets all applicable standards and requirements, are supplied. This position focus on maintaining and improving quality, reducing cost and improvement of efficiencies on all services such as coal, steam, electricity and water.

Minimum Requirements:

  • Tertiary qualification in Winemaking or Chemical engineering
  • Winemaking or Distillation experience
  • 3-5 years supervisory experience
  • Relocate to Worcester

Job Summary:

  • To supervise the distillation production processes to meet the production specifications and division targets.
  • Ensure daily activities are executed to run the Potstill distillation as well as Column still distillation processes.
  • Report daily activities and make necessary changes to the process to comply with quality specifications.
  • Ensure production checks are done during the distilling process and recorded accordingly.
  • Ensure weekly production reports are completed and reported to Manager Distilleries.
  • Ensure continuous improvement in distillation of spirits and production efficiencies.
  • To supervise the laboratory function to ensure the evaluation of samples are done and to make the necessary changes as/if required.
  • Ensure maintenance activities takes place to utilize equipment to its full capacity according to overall equipment efficiency principles.
  • Supporting the Manager Distillery Plants with bulk product and product improvement by means of trial blends and set up of tastings to evaluate product.
  • Report on analysis of GC results from distillates and trials done during the season.
  • Ensure compliance with Quality Control, OHSact and Risk Management.
  • Assisting with the scheduling and offloading of wine during the season.
  • Ensure the effective management of subordinates.
  • Applying leadership skills to ensure competent and motivated staff.
  • Be available during weekends and after hours for problem solving and assistance in the distillery
