Train restaurant staff to enhance wine knowledge and service delivery

Ensure correct presentation and temperature of all beverages

Regularly update the wine list in line with stock and seasonal changes

Manage orders for all wines and other beverages
-
Meet with suppliers and introduce new wines to the estate’s collection
-
Prepare the wine service area before service periods
-
Maintain adequate stock and ensure all wine equipment is functional
-
Conduct routine equipment and temperature checks
-
Ensure cleanliness and good repair of all decanters and wine service tools
-
Minimize losses through careful handling and control of stock
-
Perform monthly beverage stock-takes
-
Enhance guest satisfaction through personalized wine recommendations
-
Adhere to the Liquor Act (No. 59 of 2003) and all applicable beverage regulations
-
Grade 12 and certification from the Cape Wine Academy or WSET Level 2 (minimum)
-
2 to 3 years' experience as a Sommelier or Wine Tutor
-
Deep knowledge of wine varietals, regions, climates, harvest times, and production methods

Previous experience in wine listing and beverage procurement

Strong passion for wine and the hospitality industry

Excellent product knowledge and the ability to communicate it to guests

Strong interpersonal and communication skills

Customer service focused with the ability to engage with high-end clientele

Well-presented, professional, and enthusiastic demeanour
-
Ability to work collaboratively across departments

High level of accountability and flexibility in daily operations
