The Pastry Chef de Partie is responsible for delivering high–quality pastry production in line with Cavalli Estate’s culinary standards. The ideal candidate must be highly skilled in pastry techniques, demonstrate strong organisational ability, and maintain consistent excellence in a high-pressure kitchen environment. A Pastry Chef must display dedication, passion, and a willingness to grow under guidance.

Key Responsibilities

  • Maintain extensive knowledge of pastry speciality and a solid understanding of overall kitchen operations.

  • Demonstrate dedication, passion, and a strong work ethic, particularly at Junior level.

  • Work in an organised, efficient manner and perform consistently under pressure while upholding exceptional standards.

  • Issue clear instructions within the section and reliably carry out directives from senior management.

  • Prepare, cook, monitor, and present dishes in accordance with restaurant standards.

  • Uphold strict health, safety, and hygiene protocols at all times.

  • Identify and resolve operational issues promptly and effectively.

  • Ensure proper stock rotation, control, and respect for ingredients.

  • Ensure all completed food items are correctly labelled, wrapped, and stored.

  • Adhere to cleaning schedules and delegate cleaning tasks appropriately.

  • Comply with all company policies, procedures, standards, and guidelines.

  • Communicate professionally, clearly, and consistently.

  • Maintain a high standard of personal presentation and lead by example, including during demanding working hours.

Requirements

  • A minimum of 2–3 years’ experience in a Pastry Chef de Partie or similar role 

  • Formal culinary qualification 

  • Strong understanding of classic and modern pastry techniques.

  • Ability to follow recipes accurately and maintain consistency.

  • Excellent organisational and time-management skills.

  • Ability to work long hours, weekends, and public holidays as required.

  • Strong communication skills with the ability to give and follow instructions.

  • Ability to work efficiently under pressure in a fast-paced environment.

  • High standards of hygiene, food safety, and kitchen cleanliness.

  • Reliability, professionalism, and a positive attitude.

  • A proactive approach to problem-solving and continuous improvement.

  • Ability to work both independently and collaboratively within a team.
