We are seeking an accomplished Senior Restaurant Manager with a strong, dedicated background in Food & Beverage operations to lead a high-volume, luxury hotel dining environment. This role requires a hands-on leader with exceptional operational, financial, and people-management skills, and a genuine passion for delivering outstanding guest experiences.
Key Responsibilities

Lead and manage all F&B service operations including restaurants, bars, in-room dining, and pool service

Drive service excellence while maintaining strict luxury and operational standards

Oversee daily operations, stock control, and beverage stock counts

Manage budgets, cost controls, revenue optimisation, and cash flow

Lead, train, coach, and performance-manage large, diverse teams
-
Plan and execute group functions and special events
-
Ensure compliance with health, safety, hygiene, and HR procedures

Work closely with support departments to ensure operational efficiency
Key Requirements
-
Minimum 5–6 years’ experience in Food & Beverage operations, with at least 3 years at senior management level

Proven experience in high-volume, luxury restaurant or hotel dining environments

Background in 5-star hotels, luxury restaurants, or premium game lodges highly advantageous
-
Strong leadership skills with a hands-on, lead-from-the-front approach

Excellent knowledge of F&B financials, stock control, and cost management

Passion for guest experience, service excellence, and wine
-
Hospitality Degree/Diploma preferred; WSET/CWA advantageous

Able to work flexible hours, weekends, and public holidays
