D’Aria is seeking a motivated and detail-oriented Assistant Winemaker to join our Production & Cellar team.

This is a junior management position reporting directly to the Winemaker and plays a key role in ensuring the consistent quality of our wines from harvest through to dispatch.

The successful candidate has to be able to work independently and take initiative with premium wine production being the focus.

Key Responsibilities Include:

  • Assisting in and managing all stages of wine production, including harvest intake, fermentation, racking, stabilisation, filtration, blending, bottling, and labelling
  • Supervising and guiding cellar staff to ensure quality wine production
  • Maintaining strict hygiene, safety, quality control, and traceability standards
  • Completing and submitting all SAWIS documentation accurately and on time
  • Maintaining up-to-date production and inventory records on EZwine
  • Managing cellar additions, dry goods stock, and conducting regular stock counts
  • Operating a forklift for safe movement of stock, barrels, and palletised goods
  • Overseeing warehouse operations, stock movement, packing, and dispatch as well as conducting regular stock counts
  • Ensuring compliance with health, safety, and operational procedures
  • Supporting tasting events, exhibitions, trade shows, and staff training when required
  • Managing cellar and warehouse operations in the absence of the Winemaker

Minimum Requirements:

  • Degree or diploma in wine studies
  • Minimum of three completed harvests
  • Valid forklift licence
  • Preferably two years of full-year cellar experience
  • Proven ability to lead a team
  • Strong attention to detail and accountability
