We are seeking an experienced and motivated Senior Cellar Assistant (Cellar Lead) to oversee daily cellar operations and support the winemaking team. This role combines hands-on cellar work with team leadership and administrative responsibilities, ensuring that all cellar activities are completed efficiently, safely, and to a high-quality standard.

The successful candidate will lead the cellar team in executing production tasks while maintaining accurate records, coordinating workflow, and supporting the winemaker in operational planning.

Key Responsibilities:

Cellar Operations
• Lead and participate in all cellar activities including crushing, pressing, fermentation management,
racking, blending, stabilisation, filtration, and bottling preparation
• Ensure cellar work is completed according to winemaking instructions and production schedules
• Monitor fermentations and tank operations and report any issues promptly
• Maintain cleanliness and sanitation standards across the cellar and equipment
• Operate cellar equipment including pumps, presses, forklifts, and filtration systems

Team Leadership
• Supervise and guide cellar staff and seasonal workers
• Ensure work is completed efficiently according to standard operating procedures
• Train new cellar team members on cellar procedures and safety practices
• Support the team during harvest and high-production periods

Administration & Record Keeping
• Maintain accurate cellar records including fermentation logs, tank movements, and treatment records
• Assist with inventory management of cellar consumables and materials
• Report equipment issues and maintenance requirements
• Support compliance with health & safety, food safety and quality requirements


Requirements:

Education & Experience
• Minimum 8-10 years hands-on cellar experience
• Relevant winemaking/industry certifications and qualifications advantageous
• Demonstrated leadership or supervisory experience in a cellar environment
• Strong understanding of winemaking processes and cellar operations
• Ability to manage both physical cellar work and administrative responsibilities
