La Vierge Wines is seeking an energetic and detail-oriented FOH Manager to manage and maintain our beautiful estate in Hermanus.

The ideal candidate will have strong problem-solving skills, be able to work under pressure, and be available for emergencies.This role oversees all customer-facing operations, ensuring service excellence, smooth daily operations, and alignment with the estate’s brand, hospitality standards, and wine offering.

Key Responsibilities

Guest Experience & Service

  • Ensure a warm, professional and consistent guest experience
  • Act as the primary point of contact for guests, handling complaints and requests
  • Maintain service standards aligned with La Vierge expectations
  • Create a welcoming atmosphere that reflects La Vierge

Team Leadership & Staffing

  • Recruit, train and manage FOH Cleaners, Wine ambassadors.
  • Prepare and manage staff rosters and shift schedules
  • Lead pre-service briefings and ongoing service coaching
  • Monitor staff performance and address conduct or service issues
  • Foster a positive, respectful and high-performance team culture

Operations & Floor Management

  • Manage reservations, walk-ins and table flow
  • Ensure smooth coordination between FOH, kitchen and wine/tasting teams
  • Monitor cleanliness, table setup and overall presentation
  • Ensure compliance with health, safety and liquor regulations

Wine & Beverage Oversight

  • Ensure staff have strong knowledge of the estate’s wines and wine service
  • Coordinate wine pairings and upselling opportunities
  • Work closely with winemaking or tasting room teams where applicable
  • Maintain beverage stock levels and assist with ordering

Administration & Reporting

  • Assist with stock control, cash-ups and daily reports
  • Monitor service costs, breakages and wastage
  • Support the implementation of promotions, events and seasonal menus
  • Provide feedback to management on service improvements
