De Grendel Wine Estate, situated in Panorama and facing the beautiful Table Mountain, has an exciting opportunity for a reliable Senior Sous Chef with a passion for food and a commitment to culinary excellence to join their restaurant team.
The ideal candidate has strong team management-, organisational-, and time management skills, paired with the ability to work efficiently in a fast-paced, high-pressure commercial kitchen environment.
The successful candidate will be responsible for: *Supervising kitchen staff and delegating tasks *Maintaining high standards of food quality, presentation, and consistency *Training, mentoring, and monitoring junior kitchen staff/chefs *Enforcing and maintaining strict hygiene, food safety, and cleanliness standards in line with regulations *Assisting with stock control, stock rotation, and ordering *Supporting menu execution and contributing to menu development where required *Ensuring all food is prepared and presented according to established recipes and standards *Managing the kitchen in the absence of the Head Chef *Monitoring portion control and assisting in maintaining food cost targets *Ensuring equipment is used correctly and report any maintenance issues promptly *Maintaining clear communication with front-of-house and management teams *All other duties related to the role.
Minimum requirements:
- A relevant tertiary qualification and/or accredited practical training;
- Proven experience in a Sous Chef or similar senior kitchen role;
- Strong understanding of kitchen operations, food safety, and hygiene standards;
- Excellent communication skills and ability to work well with a diverse team;
- Own reliable transport.
