Origin Wine Stellenbosch is looking for a Head Of Winemaking
Responsible to plan and manage all productions scheduled, in co-operation with schedule planner. Ensure that all wine is prepared according to the agreed specifications and within target dates as per the company standards and procedures. Managing of all stock invoiced to Origin Wine regardless of the final premises. Manage the winemaking team within the company and ensure that all the responsibilities are well maintained as per each winemaking position. Ensure quality standards and HACCP accreditation is adhere to according to company requirements.
Tasks:
1. Cellar Processes
- Managing of systems and structures according to production orders in co-operation with schedule planner for both bottle and bulk wine.
- Plans daily cellar processing at all sites with winemakers according to requirements for local and international orders.
- Managing daily resources which includes the monthly management of overtime, shift planning and KPI reports.
- Ensures the 3 million litre cellar capacity at HOOW is fully utilised by planning wine intake and stock keeping.
- Ensure that wines are prepared according to Origin Wine client’s specifications for bottling and/or bulk loading including blending, fining/treating, stabilisation, final adjustments and tasting.
- Ensure that the agreed services for 3rd Party clients are within specifications for bottling and/or bulk loading including blending, fining/treating, stabilisation, final adjustments and tasting.
- Ensures correct operation of the Cross-flow filtration, Stabtar- and cold stabilization units.
- Ensures the tasting and signing off on bottle-/bulk wines procedures are followed and signed off accordingly.
- Ensures that all procedures are maintained and within QC standards.
- Managing and respect all quality and ethical standards within the cellar environment.
- Support Wine Buyer in grape and wine projects as well as organic grape processing at external cellars.
- Support Wine Buyer with weekly wine intake planning.
- Allocation of wine to all bottle and bulk SKUs for the weekly wine planning.
- Ensure that all products get meet client expectation including wine specification and quality prior to trucking into OWS.
- Ensure that stock gets managed according to the agreement and size of package.
2. Utilisation of Resources
- Establishes and maintains appropriate systems for measuring production/processing performance.
- Establishes work instructions/procedures and updates same on a regular basis.
- Establishes and adheres to stock holding requirements.
- Plans and liaises with bottling department regarding production requirements.
- Monitors, measures and reports on production/processing plans and achievements.
- Manages and controls expenditure within agreed budgets.
3. Administration
- Ensures completion of SAWIS documentation including BG6’s, WSR1’s, pink cards and other wine intake related documentation, including DA32’s and as well as WS-application prior to harvest.
- Ensures daily wine movement is captured and kept for traceability (SAGE).
- Ensures the completion of export documentation after each loading.
- Ensures work instructions/ cleaning records are kept for traceability.
- Ensures wine analysis kept for traceability.
- Checks and authorises monthly invoicing of 3rd Party client’s services.
- Ensure that SAGE is well implemented in terms of wine contracts (volume, correct codes, pricing and managed according to company expectations.
- Set up, maintain detailed recordkeeping of harvest tonnage reconciliations.
- Set up, maintain, and monitoring off-site stock takes.
- Regularly update the Buying Plan with volumes per producer, pricing, and average costings.
4. Quality Management Systems
- Ensures QMS standards and procedures are adhered to.
- Follows QMS protocol as described by QMS procedures.
- Ensures that all work instructions, operating procedures are current and complied with.
- Assist during internal audits at OWS (traceability, walkthroughs, auditor queries).
5. People Management
- Maintains discipline and ensures adherence to company policy in regard to timekeeping, work performance and behaviour, quality standards, deadlines and proper procedures.
- Provides employees with guidance in handling difficult or complex problems and in resolving escalated complaints or disputes.
- Conducts performance appraisals and reviews and recruits staff when necessary.
- Identifies training needs and contributes to the development of individuals.
6. Health, Safety and Housekeeping
- Ensures all safety policies and procedures are adhered to in the cellar areas.
- Contributes to the on-going improvement of safety awareness and practises on the Origin site by being an active member of the Safety Committee if required.
- Ensures cellar processes are monitored and changes are initiated in accordance with the company’s Hygiene Management System and Procedures.
- Ensures housekeeping is kept in order and meets required standards as well as general maintenance and all areas of responsibility are clean and neat.
- Works closely with the safety representatives to ensure adherence to safe work practices.
- Adherence to company and statutory requirements & compliance.
