Our client, a Sophisticated Restaurant, situated on a Stellenbosch Wine Estate, is looking to employ an experienced Sous Chef who is a disciplined culinary leader.
As the Sous Chef, you will play a pivotal role in supporting the Head Chef in managing kitchen operations, supervising staff, and ensuring the highest standards of food quality and presentation.
The position will balance advanced technical cooking skills with high-pressure staff management, inventory control, and rigorous adherence to food safety and hygiene standards. You will also assist with menu planning and costing recipes, food consumption, strict stock controls, stock management, stock movement, rotation and ordering and supplier liaison, excellent control of food cost, wastage and kitchen preparation, staff development and disciplining, setting up and managing SOP’s, ensuring the team has high standards of food hygiene and follow the rules of health and safety.
• Proven experience as a Sous Chef in a high-end hospitality environment
• Culinary degree or equivalent certification
• Strong knowledge of culinary techniques, flavour profiles, and presentation
• Leadership and supervisory experience with the ability to motivate and manage a team
• Excellent organizational and multitasking skills
• Knowledge of food safety and sanitation regulations
• Culinary creativity and innovation
• Strong leadership and interpersonal skills
• Time management and organizational proficiency
• Adaptability and flexibility in a fast-paced kitchen environment
• Effective communication and collaboration with kitchen staff
