Esteemed Winery, a boutique wine producer based in the heart of the Paarl wine region, is seeking a highly motivated Assistant Winemaker to join its production team. This is a hands-on, high-responsibility role working directly with the Winemaker across all stages of production, from harvest through to bottling and final dispatch.

This position is ideal for an individual who is technically strong, detail-oriented, and passionate about producing premium-quality wines in a dynamic, small-team environment.

The Assistant Winemaker will support the Winemaker in all aspects of wine production and cellar operations, ensuring the highest standards of quality, compliance, and efficiency are maintained throughout the production process.

Key Responsibilities:

Cellar Operations

  • Assist with all winemaking activities from grape intake through to bottling.
  • Monitor fermentations and conduct routine wine analyses.
  • Perform wine movements, rackings, additions, blending, filtration, and stabilization procedures.
  • Maintain accurate cellar records and production documentation.
  • Ensure cleanliness, hygiene, and organization of all cellar areas.

Compliance & Administration

  • Assist with SAWIS administration and certification processes.
  • Manage DAWINE Online applications and export documentation.
  • Maintain Vinlab records and analysis documentation.
  • Ensure compliance with industry regulations and company standards.
  • Assist with IPW requirements and traceability documentation.

Bottling & Stock Control

  • Coordinate pre-bottling quality checks.
  • Oversee bottling operations and dry goods management.
  • Conduct stock takes and inventory reconciliation.
  • Maintain accurate records of bulk wine, dry goods, and cellar consumables.

Harvest Operations

  • Support grape intake and processing activities.
  • Assist in coordinating harvest logistics and scheduling.
  • Supervise seasonal staff and interns where required.
  • Participate actively in all harvest-related cellar activities.

Brand Representation

  • Participate in tastings, wine shows, trade events, and winery functions when required.
  • Act as an ambassador for the brand and values.

Requirements

The successful candidate should possess:

  • A degree or diploma in Viticulture and Oenology or a related field.
  • 1–2 years of practical cellar or winemaking experience.
  • Strong attention to detail and excellent organizational skills.
  • Knowledge of cellar operations, wine analysis, and wine production practices.
  • Experience with SAWIS, export administration, and cellar record keeping will be advantageous.
  • A valid driver's license and own transport.
  • A positive attitude, strong work ethic, and willingness to work flexible hours during harvest.
