Baccō Estate is a premium wine farm, situated in the Paarl region. We invite applications for an internship for the 2027 harvest. This is an opportunity to gain valuable experience across all aspects of the winemaking process. We are looking for one intern to join us for the 2027 season in both the cellar and the vineyard.

Dates:

Start: Early January 2027
End: March/April (subject to seasonal variation)

Key Responsibilities:

Intern will be involved in:

The cellar:

  • Set-up and break down of harvest processing equipment
  • Management of crush pad
  • Monitor fermentation enzymatics
  • Record keeping of fermentation analytics
  • Additions/ Adjustments
  • Fermentation management practices
  • Upkeep of cellar cleaning/ hygiene
  • Cleaning of processing equipment
  • Pressing of grapes
  • Barrel preparation and filling

The vineyard:

  • Grape sampling during growth season
  • Vineyard reports
  • Data entry of grape enzymatics

We are a small team, so this is an opportunity for a hands-on experience!

Candidate Profile:

Requirements:

  • Tertiary studies in Viticulture and Oenology would be preferred but not compulsory
  • Are serious about a career in winemaking and committed to learning
  • Display a strong work ethic, physical stamina, and be able to manage long hours
  • Communicate effectively and work well in a small, focused team
  • Have prior harvest or cellar experience (advantageous but not essential)
  • Own accommodation and transport required
