Inherent Requirements:

  • WSET Level 3
  • Court of Master Sommelier advanced or SASA Level 2

Experience and skills:

  • Minimum of 3 years in the same or similar role
  • Fine dining experience in a top 20 restaurant in the last 3 years
  • Excellent South African and Italian wine knowledge
  • Proficient in Microsoft office applications at intermediate level
  • Proficient in operating restaurant point of sales systems
  • experience is advantageous

Main Responsibilities:

  • Developing wine lists, advising guests and pairing wines with food menus and conduct tastings when required
  • Understanding and ability to implement wine pricing and purchasing structures for a restaurant
  • Organise and conduct regular spot checks throughout all the outlets, store rooms and wine cellars for monitoring stock control
  • Ensure efficient internal communication with other departments to ensure the wine cycle of purchase, storage, promotion, service and sales happens effectively and is well co-ordinated
  • Ensure that all wine lists are continually updated and out of stock wines are replaced and communicated accordingly
  • Upsell and maximise sales revenue whenever and wherever possible through intensive training of Waiters and Barman
  • Ensure the beverage service to guests is of the expected fine dining service standard, maintaining the reputation of the restaurants
