Inherent Requirements:

  • Hotel Management or F&B Management qualification

Experience and skills:

  • Minimum of 3 years in the same or similar role
  • Fine dining experience in a top 20 restaurant in the last 3 years
  • Food and wine pairing service
  • Knowledge and experience of Italian cuisine is advantageous
  • Proficiency in Microsoft office applications at intermediate level
  • Proficient in operating restaurant point of Sales systems and cash-ups
  • experience is advantageous

Main Responsibilities:

  • Follow and monitor policies, processes and standards to ensure effective high-quality fine dining food and beverage service is provided to guests
  • Overseeing, directing and upskilling the service team, taking correction action when necessary
  • Promote and maintain compliance and awareness of health, safety and security issues in accordance with applicable legislation and best practice
  • Identify areas in which waste can be reduced, financial savings made and monitor service practices to achieve waste reduction targets
  • Accurately count and document food and beverage team members cash-ups, reporting and investigating any shortages immediately
  • Responsible for managing and controlling all food and beverage par levels and stock takes
