Inherent Requirements:

  • International Professional Cookery qualification
  • Proficiency in Microsoft applications

Experience and skills:

  • Develop and cost menus that offer the food needs, dietary requirements and expectations of guests, which include seasonal offerings and promotions
  • Experienced in preparing annual plans including budgets and monitoring financial performance
  • Experienced in selecting, motivating and guiding culinary management and operations team members
  • Competent in developing, training and ensuring policies, processes and standards are implemented and applied across the kitchen and stewarding functions
  • Ability to monitor and ensure compliance with health, safety, security and other legal requirements across the kitchen and stewarding operations
  • Ability to analyse and improve kitchen and stewarding operational effectiveness and efficiencies

Main Responsibilities:

  • Deliver food products of consistent high quality, following standard recipes and meeting special guest requests
  • Full management of monthly stock takes, payroll and performance of kitchen and stewarding teams
  • Take where necessary, immediate corrective actions to ensure compliance with all quality standards, especially food safety practices, controls to meet guests expectations
  • Effective coordination between kitchen, stewarding, purchasing and food and beverage teams
  • Maintain applicable ratings for kitchen and stewarding performance in quality, health and hygiene audits
  • Manage and adhere to kitchen and stewarding department budgets and forecasts
  • Achievement of the monthly budgeted food cost
