Inherent Requirements:

  • Hotel Management or F&B Management qualification
  • Cape Wine Academy or WSET Level 2 certificate
  • Italian speaking is advantageous

Experience and skills:

  • Minimum of 5 years in the same or similar role
  • Fine dining experience in a top 20 restaurant in the last 3 years
  • Food and wine pairing service
  • Knowledge and experience of Italian cuisine is advantageous
  • Administer Payroll, performance, conduct, hiring and training of all front of house staff
  • Proficiency in Microsoft office applications at intermediate level
  • Proficient in operating restaurant point of sale systems and cash-ups

Main Responsibilities:

  • Implement and monitor policies, processes and standards to ensure effective fine dining restaurant service is provided to guests
  • Management and administration of all front of house staff and cleanliness of the restaurant
  • Management and control of operating equipment and stock takes, identifying ways to reduce waste and improving financial savings
  • Identify and capitilise on opportunities to up-sell products and services
  • Takes responsibility to drive revenue to meet and exceed annual budgets
  • Ensure that all waitering and bar service staff receive on going training in service and food safety
