TITLE: Part Time Winemaker


LOCATION: Oneiric, Elgin




Under general direction, responsible for the entire winemaking operation and quality assurance program for all brands produced by the Oneiric facility and vineyards, including custom crush. In coordination with the Vineyard Manager, monitors farming schedule and grape harvesting and ensures winery and vineyard plans and schedules are in alignment and wine produced is of the highest quality. Manages winemaking operations through direct staff and in coordination with other departmental managers.



• Ensures the timely production of assigned wine blends and company products meeting company regulatory standards. 

• Responsible for leading the Red Winemaking Team and assuring quality and brand requirements are met for all wines and brands under his/her direction. 

• Responsible for multiple varietals and brands.  

• A strong background in the production of high quality red wine is preferred.

• Directs all wine production and lab operations including but not limited to wine fermentation, blending, stabilization, bottling and storage.

• Creates, communicates and implements winemaking protocols.

• Designs and implements technical and research programs.

• Develops procedural and quality control manuals as needed.

• Arranges and participates in regular sensory evaluation trials.

• Participates in development of planned winery facilities, assuring efficient, high-quality operations.

• Makes recommendations regarding winemaking equipment purchases.

• Reviews winery operation and safety guidelines as they relate to industry regulations, trends and new technology.

• Prepares short and long-term production plans, grape and bulk wine requirements.

• Spokesperson for the winery during market visits, media relations programs and hospitality events.

• Participates in special projects as assigned by General Manager and Production management.

• Develops/monitors research projects.



• Organize, train and manage direct reports on the Red Winemaking Team

• Responsible for crush planning and production

• Direct and help execute all winemaking operations to meet production targets (grape to bottle)

• Collaborate with peers to ensure quality of brands and wines

• Brand, blend and surplus wine management

• Evaluate cellar and production for process improvement

• Track and maintain wine quality through finishing and storage

• Provide technical expertise in various processing areas

• Review monthly samples of wine to ensure wines are aging appropriately, act to mitigate any spoilage

• Review bulk wines for suitability as blending components

• Manage micro-oxygenation levels in conjunction with maturation utilizing oak adjuncts; including tastings

• Plan aging and processing steps required to meet shipping deadlines

• Taste fermentation tanks daily to assess health of fermentation. With Director of Winemaking create PO/PD and pressing lists 

• Handle public relations including tastings, tours and continual education
