Cavalli Estate seeks an Assistant Winemaker

The assistant winemaker position reports to the Winemaker and is responsible for:

GENERAL WINEMAKING

  • Practical involvement in all processes in the cellar & includes the following:
    • Racking and movement of wine (tank and barrels)
    • Blending
    • Barrel work (preparation and filling, topping, rack and return, battonage)
    • Tank preparation
    • Cleaning and sanitising
    • Full responsibility for all work performed in the physical absence of the winemaker.
    • Regular communication with the winemaker on all work being performed in the cellar.
    • Monthly analyses of all wines being stored, but with prior communication with the winemaker.
    • Monthly sulphur additions to stored wines, but with prior communication with the winemaker.
    • Monthly topping of barrel stored wines, but with prior communication with the winemaker.
    • General wines additions, but with prior communication with the winemaker.
    • Bulk wine tanker dispatch and bulk wine receival 


HARVEST PERIOD

  • Practical involvement in all processes in the cellar during harvest & involves the following:
  • Weighing & documentation of grapes received
  • Quality control on sorting tables
  • Tank and equipment preparation
  • Fermentation management
  • Yeast, bacteria and nutritional additions
  • Pump – overs and punch downs
  • Pressings and emptying of tanks
  • Racking of wines and juice
  • Blending
  • Barrels work (preparation and filling, topping, rack and return, battonage)
  • Cleaning and sanitising
  • Preparation of cellar for harvest
  • Full responsibility for all work performed in the physical absence of the winemaker.
  • Regular communication with the winemaker on all work being performed in the cellar.
  • Operation and monitoring of all crush processes.
  • Quality control on worked performed labour employment during harvest.
  • Fruit sampling & juice and wine analyses (balling, pH, TA).
  • Administration and documentation with assistance of winemaker:
  • SAWIS harvest book and weekly notification of grape harvest in advance
  • Documenting all relevant information in harvest file 

  • GENERAL CELLAR
  • Generate work orders, coordinate cellar work and ensure efficient operation.
  • Maintenance of all cellar equipment and direct communication with winemaker.
  • Monitoring cooling plant and compressor where applicable
  • Monitoring / regular check on temperatures of tanks.
  • Monitoring water traps regularly where applicable.
  • Monitor and manage sanitary state of the winery:
  • Application of the correct cleaning procedures
  • Monthly sulphur burning in barrels
  • Cleaning inside and outside of tanks
  • Pest control where applicable
  • Opening and locking up of the winery where necessary.
  • Supervising cellar staff.
  • Assist with waste water management where applicable.
  • Initiate cellar staff training 


STOCK TAKING & ORDERS & WINE ORDER PREPARATION

  • Stock control of dry goods needed and placement of orders for following (Consult winemaker before placing orders)
    • Bottling – bottles, corks, gas, bins etc.
    • Labelling – capsules, labels, boxes, barcodes etc.
    • Cellar chemicals, equipment and supplies
  • Receiving, checking and signing off delivery notes for all orders arriving at the winery.
  • Preparation and checking of wine orders leaving the cellar for local and export market in consultation with the 
winemaker
  • Ordering and checking importer details needed for export orders
  • Managing correct export procedures (Sawis 6, Export Certificates, Pallets. Etc.)
  • Responsible person for loading of containers. To be supervised at all times.
  • Responsible for informing farm manager of all deliveries to be completed to various warehouses when needed.
  • Delivery of tasting room stock/orders as required. 


BOTTLING AND LABELLING

  • Operation and supervision of bottling and labelling machines with the necessary regular maintenance where applicable.
  • Arrange for mobile bottling and disgorging and the relevant set-up for MCC production. 


 

WINE ADMINISTRATION

  • The completion of all SAWIS certification records in consultation with winemaker:
  • BG1, BG5, BG6, BG9, BG11
  • Notification of blending and bottling and label approval
  • Ensure that wine tasting dates are valid
  • Preparation of documentation for yearly Sawis stock take
 SAWIS 10, Stock take of all bulk wines, unlabeled and labelled stock
  • The completion of IPW
 All documentation relating to IPW must be kept up to date

  • Keeping record of services rendered to other wineries/clients and the relevant account
  • Placement of orders (as mentioned above)
  • Record keeping of all wine blends, movements and work orders 

  • Health and Safety
    • Ensure all SOP and work procedures are kept updated
    • Schedule safety meetings every 3 months
    • As winery GMR – responsible for any work related injuries and incident documentation

TOURS AND TASTINGS

  • The willingness to do tastings, wine shows and cellar tours when required

VINEYARDS

  • To assist the winemaker in coordinating vineyard practices:

  • Scheduling of chemical spray programs

  • Purchasing of vineyard chemicals

  • Scheduling routine maintenance of tractors and vineyard equipment
  • Coordinating vineyard staff and monitoring work being performed
  • Assisting with tractor operations when the need arises
  • Daily monitoring of chemical use and rainfall
