Sous Chef/Head Chef - market related

Bellevue Wine Estate is situated in the Stellonbosch wine area and is looking for a Sous Chef who needs to step up to Head Chef.

Duties and responsibilities

  • Training, development and leadership of the team.
  • Maintaining a harmonious relationship between the kitchen team and other departments on the estate.
  • Completion of all necessary admin and reports.
  • Develop menus and recipes in collaboration with general manager.
  • Control supplier’s quality of delivered products.
  • Ensuring adequacy of mise-en-place.
  • Follow the guidance of the general manager and have input in new ways of presentation of dishes.
  • Put effort in optimizing the cooking process with attention to speed and quality.
  • Enforce strict health and hygiene standards.
  • Stay current on restaurant and industry trends.
  • Identify new culinary techniques and presentations
  • Help to maintain a climate of smooth and friendly cooperation.
  • Ensure that food costs remain within budget without negatively impacting the guest experience.

 Experience and characteristics

  • Experience in managing a team under pressure.
  • Results and standards orientated.
  • Works with passion, pride and ambition.
  • Strong organizational and admin skills.
  • Budgeting, procurement and cost control.
  • Comfortable with customers and patrons.
  • Excellent communication skills .
  • Excellent knowledge of hygiene standards and food safety.
