Core function of the position Senior Sous Chef:


To manage the Lodge kitchen in the absence of the Head Chef

  • A minimum of 5 years management experience in a medium sized kitchen
  • International experience in a 5* establishment would be advantageous
  • Ability to produce innovative and modern dishes
  • Passion for preparing food daily
  • Be flexible and adaptable
  • Experience in supervising and training a kitchen brigade
  • Management of staff canteens
  • Excellent planning and organizational skills
  • Administration of orders and stock control
  • Experience of working in a professional kitchen
  • Be prepared to lead by example in the kitchen
  • Good quality controls with regards to food served
  • Managing health and hygiene procedures
