Overall job purpose

The production manager controls and plans all production and sales within the bakery. The production manager ensures that quality control, stock and production rotation is correctly executed, in order that all the relevant departments are supplied with sufficient high-quality baked items, to delight customers and enhance the brand. To this end, this function ensures that bakery department is staffed with satisfied employees who are suitably skilled and trained, instructed, coached and mentored, and produce exceptional quality products within a well-managed, safe and hygienic bakery.

Key responsibilities and duties

- plan all daily production of quality products manufactured in the bakery
- controls, orders and monitors all stock, materials and equipment for optimum bakery production
- ensures sufficient suitably trained staff are scheduled to work to meet scheduled production requirements
- supervision of the team to ensure quality production methods and procedures are adhered to
- ensures that the company remains a leading brand grow a satisfied customer base
- ensures high standards of hygiene and safety are maintained within the bakery department

Experience
- 5-7 years’ experience in food production and manufacturing processes and techniques
- 5 -7 years supervisory/management experience
- 3-5 years baking experience
- solid knowledge of food quality and health and safety systems, standards and compliance
- knowledge of business, finance and disciplinary procedures

Skills
natural leadership ability
excellent communication skills knowledge of hygiene, health and safety systems; haccp/iso highly advantageous
able to handle high pressure and deadlines
excellent numerical skills
planning and organising skills
ability to make decisions and analyse problems
attention to detail

Languages
English
Afrikaans and Xhosa advantageous but not required


qualifications
matric certificate
tertiary qualification in production management/food technology advantageous

Computer skills
microsoft office, especially excel essential
knowledge of stock control software and the ability to learn to use new software quickly
