A renowned award-winning Estate in the hospitality industry, Franschhoek, is seeking an Executive Chef that is creative and proficient in all aspects of Managing and controlling various kitchen operations.

The successful candidate must be a Leader, able to work under pressure, must be accurate, be able to give attention to detail, guest focused but also be a team player.

The candidate needs to be a passionate professional with ambition to achieve and deliver World Class Standards. Be able to maintain a high standard of etiquette, professionalism, be responsible, committed to excellence, be able to work long hours (public holidays) and work under pressure,

It is expected that a calm hands-on approach be applied at all times regarding Managing the kitchen, team and tasks to be done, ensuring excellent and outstanding food experiences to our guests.

Key Responsibilities:

  • Management and development of business, overall responsibility for daily operations of the kitchen
  • Ability to manage, delegate, lead and oversee a team including all necessary training to achieve optimum quality, excellent communication and interpersonal skills
  • Systems and budgetary control, recording and daily sales management
  • Comply with nutrition and sanitation regulations and safety standards
  • Maintain equipment, purchases and repairs
  • Create, modify and prepare special menu designs, pricing, food presentation aesthetics, directing food preparation and culinary activities
  • Knowledge of HR processes and procedures, interviewing, recruiting, training, disciplinaries, time, payroll responsibilities, performance reviews etc.
  • Supervise kitchen staff’s activities and perform administrative duties

Requirements of applicant:

  • A proven track record and experience as an Executive Chef within a quality environment and to be able to demonstrate excellent standards, cooking skills, menus that are both creative and profitable, keep up with cooking trends and best practices
  • Excellent record of kitchen management, ability to spot and resolve problems efficiently
  • A positive approach, excellent organisational skills, and a passion for producing high quality customer care, capable of delegating multiple tasks
  • Communication and leadership skills and team player
  • Working knowledge of various computer software programs (MS Office, Restaurant management etc.)

Qualifications and Experience:

  • Experience in national and international establishments would be of advantage.
  • BS degree in Culinary science or related certificate
