Qualification: Relevant degree or diploma

Experience: 5 Years

Specific Experience: Good understanding of FSSC 22000 Version 4 and IBL in a confectionary environment

The roles and responsibilities within chocolate manufacture will include:

- Management of the food safety system FSSC 22000 Version 4

  1. Internal audits
  2. Supplier approval (including sourcing of raw materials that align to company requirements)
  3. Allergen management and verification
  4. Traceability for production processes
  5. Maintenance of checklists and records
  6. Staff training
  7. Management of suppliers and subcontractors

-  Management of IBL (International Britannia ERM) system

- - Recipe formulation and technical assistance for chocolate production processes including quality control

- Retail customer liaison and supplier liaison

- Management of UTZ cocoa bean sustainability program and Organic certifications (which includes mass balance and traceability)

- Management of Halaal certification – audits are performed quarterly and unannounced

- Aligning product labelling requirements to local and international standards (nutritional, allergen warnings, barcodes etc)

- Management and allocation of barcodes for retail products

- Applications for health certificates for export purposes
