Inherent Requirements:

  • Evident passion for food and delivery of a high standard product.
  • Professional Cooking Diploma.

Experience and Skills:

  • Previous experience as a Sous Chef in a 5 star environment.
  • Minimum of 5 years in a management role.
  • Highly competent in producing a wide range of foods, including ethnic foods and special dietary requirement foods.
  • Ability to lead, manage, guide and motivate kitchen employees.
  • Experienced in overseeing and directing multiple small teams.
  • Competent in ensuring policies, processes and standards are implemented and applied across the kitchen function.
  • Ability to monitor and ensure compliance with health, safety, security and other legal requirements across the kitchen operations.

Main Responsibilities:

  • Work with and monitor chefs in the production of a variety of foods, including ethnic specialties and seasonal offerings that deliver a range of healthy, authentic, safe and appealing dishes.
  • Ensure that kitchen employees adhere to all relevant food safety, security and health and safety policies, processes and procedures ensuring compliance with local legislation.
  • Ensure that kitchen employees provide impeccable customer service to guests and other departments.
  • Effectively lead kitchen employees by being a positive role model, providing a common vision and effective communication.
  • Monitor and guide kitchen employees so that they deliver food products of consistent high quality following standard recipes and meeting special requests.
  • Ensure that kitchen employees perform effectively within the limits of their allocated budgets.
  • Support the kitchen leadership team to monitor and manage kitchen and stewarding expenses and operating costs including payroll, equipment, food cost and supplies
