TOASTING METHODS
a) AOC (Austrian Oak Complex)
Traditional Fire Toasting.
b) AOE (Austrian Oak Elegance)
Fire toasting with added hot water and steam treatment (reduction of tannin) milder wood influence, similar to second passage.
TOASTING LEVELS
How intense the fire is and how long the barrels or puncheons stay over it.
NATURA (L): very low toast impact, blonde provides freshness, preserves fruit. Tannin reduced (AOE)
Ideal for Chenin Blanc especially in 500L or 600L vessels.
FLOREA (L+): freshness, minerality, more length and density (AOC or AOE)
OPTIMUS(M): adds complexity, stronger smoky notes (AOC or AOE)
SONUS(M+): deep complexity, stronger smoky notes (AOC)
