Manage and execute the preparation and cooking of dishes within a specific section of the kitchen, ensuring consistent quality and timely service.

Overview of Responsibilities:

  • Ensure that the production, preparation and presentation of food is always of the highest quality.
  • Estimate daily production needs and check the quality of raw and cooked food products to ensure that standards are met.
  • Maintains section performance to ensure the highest levels of guest satisfaction, operating and food costs are monitored on an ongoing basis to remain in line with budget
  • Develop a daily plan to achieve deliverables and ensure all team members are properly briefed of daily tasks and activities.
  • Ensure proper food handling and storage and carrying out of food safety and hygiene inspections.
  • Practice clean as you go principles.
  • Communicate daily with Sous Chef and Head-Chef and provide input to recipes, menu and kitchen processes.
  • Stay abreast of food trends, industry developments to constructively contribute to innovation in the restaurant.
  • Train team members on recipes, quality standards and processes,
  • Maintain good discipline and motivation of team members by regularly engaging on Vergelegen Values & Behaviours.

Experience:

  • Chef qualification
  • More than 5 years experience in like dining environment
  • Matric / Gr 12
  • English proficient
  • Understanding of recipe and menu development

Knowledge:

  • Communication: Well spoken, friendly and engaging.

  • Ability to work in a high-pressure environment: Able to keep composure in difficult situations, always upholding the Vergelegen Values.
  • Physical fitness and excellent stamina: Able to endure long hours on feet.
  • Strong organising and planning abilities: Executes work in a systematic and methodically manner.
