The Horticulturist will be responsible for overseeing the development, maintenance, and sustainability of the Estate’s gardens, including ornamental gardens, lawns, vegetable and herb gardens and landscaped areas. This role places strong emphasis on composting practices, soil health, and water-wise irrigation management. The Horticulturist will work closely with the Head Chef to ensure seasonal produce is cultivated to meet restaurant needs.

Key Responsibilities

Garden & Grounds Management

  • Maintain all estate gardens to a high aesthetic and horticultural standard, including lawns, pathways, and landscaped areas.
  • Implement planting plans, seasonal garden designs, and long-term landscaping development in alignment with the estate vision.
  • Conduct regular inspections to diagnose plant health, pests, or disease issues and implement appropriate treatment plans.

Vegetable, Herb & Orchard Management

  • Oversee and maintain vegetable gardens.
  • Collaborate weekly with the Head Chef, grow, and supply seasonal produce aligned to menu requirements.
  • Ensure accurate forecasting, harvesting schedules, and continuous supply of fresh produce for the restaurant.

 

Soil, Composting & Sustainability

  • Lead composting initiatives to create, maintain, and improve organic compost and soil-enrichment programmes.
  • Test, monitor and improve soil health using sustainable and regenerative agricultural practices.
  • Implement eco-friendly pest control, waste reduction, and biodiversity enhancement methods.

Irrigation & Water Management

  • Oversee, maintain, and optimise the irrigation systems across gardens and food production areas.
  • Implement water-wise strategies ensuring effective usage, rainwater harvest utilisation, and drought-resistant planting where suitable.
  • Monitor irrigation schedules, water consumption and system performance, identifying repairs or improvements required.

Teamwork & Communication

  • Work with the Garden Manager and garden team to schedule, delegate and supervise daily tasks and special projects.
  • Maintain clear communication with the Head Chef regarding crop planning, harvest supply and seasonal produce availability.
  • Liaise with external suppliers, nurseries, horticultural services, and landscapers where necessary.

Requirements & Qualifications

Education & Experience:

  • Minimum of 5 years horticultural experience, preferably on a farm, wine estate, hospitality property, or large-scale landscaped garden.
  • Qualification in Horticulture, Agriculture, Landscape Management, or related field (advantageous).
  • Experience with organic farming, vegetable cultivation, composting and irrigation systems required.

Skills & Competencies:

  • Strong knowledge of plants, soils, irrigation, pests, and sustainable horticultural practices.
  • Practical experience with composting and soil regeneration techniques.
  • Creative eye for landscaping and garden aesthetics.
  • Well-organised with the ability to plan seasonal work and meet supply expectations.
  • Strong communication and teamwork abilities, especially in cross-department collaboration.
  • Physically fit and willing to work outdoors in varying conditions.
