The Chef de Partie is responsible for managing a specific section of the kitchen with precision, consistency, and professionalism. This role requires advanced culinary knowledge, exceptional organisation, and the ability to work under pressure while maintaining the highest standards of quality, hygiene, and presentation.
Key Responsibilities
• Possess in-depth knowledge of your speciality as well as a sound understanding of all culinary functions.
• Demonstrate dedication, passion, and commitment to the culinary craft and the standards of Cavalli Estate.
• Maintain excellent organisation and perform consistently in a high-pressure environment, ensuring perfection across all tasks.
• Give clear, professional instructions within your section and reliably carry out directives from senior management.
• Prepare, cook, monitor, and present dishes in line with restaurant standards.
• Enforce strict health, safety, and hygiene practices at all times.
• Troubleshoot operational or culinary issues that arise in your section.
• Ensure that stock levels are respected, rotated, and strictly controlled.
• Ensure that all completed food items are correctly wrapped, labelled, and stored.
• Adhere to the kitchen’s cleaning schedule and delegate cleaning tasks where appropriate.
• Comply with all company policies, procedures, standards, and guidelines without exception.
• Communicate clearly, professionally, and consistently with all members of the team.
• Maintain a professional appearance, uphold personal grooming standards, and lead by example — including during long and demanding working hours.
