SOUS CHEF – LUXURY WINE ESTATE | STELLENBOSCH
Salary: R30 000 Negotiable depending on experience
Location: Stellenbosch, Western Cape
A prestigious luxury wine estate in Stellenbosch is seeking an experienced Sous Chef to join its culinary team. We are looking for a passionate and highly skilled professional with a strong fine dining background who thrives in a high-end hospitality environment.
Minimum Requirements:
- Matric and a Professional Chef Qualification
- Minimum 4 years' experience as a Sous Chef within a fine dining restaurant environment
- Strong leadership and kitchen management skills
- Experience with menu planning and cost control
- Excellent knowledge of food safety and hygiene standards
- Sushi experience or exposure will be advantageous
- Ability to work under pressure and maintain exceptional standards
- Strong communication and team management abilities
Key Responsibilities:
- Assist the Executive Chef with the daily operation of the kitchen
- Supervise and lead kitchen staff to ensure efficient service delivery
- Ensure all dishes are prepared and presented according to established standards
- Oversee food preparation, quality control and portion management
- Assist with menu development and seasonal menu changes
- Manage stock levels, ordering and inventory control
- Monitor food costs and minimise waste
- Ensure compliance with health, safety and hygiene regulations
- Train, mentor and develop junior chefs and kitchen staff
- Maintain consistency and excellence in all areas of food production
- Coordinate service during busy periods and support all kitchen sections when required
- Ensure a clean, organised and professional kitchen environment
- Step into the role of Executive Chef when required
