SOUS CHEF – LUXURY WINE ESTATE | STELLENBOSCH

Salary: R30 000 Negotiable depending on experience
Location: Stellenbosch, Western Cape

A prestigious luxury wine estate in Stellenbosch is seeking an experienced Sous Chef to join its culinary team. We are looking for a passionate and highly skilled professional with a strong fine dining background who thrives in a high-end hospitality environment.

Minimum Requirements:

  • Matric and a Professional Chef Qualification
  • Minimum 4 years' experience as a Sous Chef within a fine dining restaurant environment
  • Strong leadership and kitchen management skills
  • Experience with menu planning and cost control
  • Excellent knowledge of food safety and hygiene standards
  • Sushi experience or exposure will be advantageous
  • Ability to work under pressure and maintain exceptional standards
  • Strong communication and team management abilities

Key Responsibilities:

  • Assist the Executive Chef with the daily operation of the kitchen
  • Supervise and lead kitchen staff to ensure efficient service delivery
  • Ensure all dishes are prepared and presented according to established standards
  • Oversee food preparation, quality control and portion management
  • Assist with menu development and seasonal menu changes
  • Manage stock levels, ordering and inventory control
  • Monitor food costs and minimise waste
  • Ensure compliance with health, safety and hygiene regulations
  • Train, mentor and develop junior chefs and kitchen staff
  • Maintain consistency and excellence in all areas of food production
  • Coordinate service during busy periods and support all kitchen sections when required
  • Ensure a clean, organised and professional kitchen environment
  • Step into the role of Executive Chef when required
