Opex Control & Financial Control • Achieve targeted sales and maintain costs in line with the agreed budgets and GP's.
• Maintain optimum stock levels as per POS system and requirements
• Reconcile cash sales with systems every day.
• Managing the venue as a retail extension of the brand in the form of wine tastings, wine sales & wine education, communication and consumer experience.
• Basic management of facility and kitchen, i.e., overhead stock control, cash management (including petty cash) and scheduled expenditures.
Management & Admin • Open supplier accounts with Finance Department
• Compile & record all cooking instructions & methods of cooking.
• Implement and manage all facility operation aspects.
• Implement new buttons on POS for new items.
• Recipe linking on POS and implement new buttons (platinum) for new items.
• Address customer food complaints and implement corrective action.
• Stock control and rotation of food & menu items
• Daily and monthly stock takes. Stock control and management on SAP.
• Daily ordering of supplies
• Implement and manage cleaning schedules.
• Any maintenance issues to be reported.
• To be flexible and willing to help other section when needed.
• Proper food handling technique to be used.
• Friendly, efficient service always.
• Ensure opening and closing procedures are followed.
• Ensure health & safety compliance to regulations are upheld.
Human Resources • Ensure that all personnel are trained to follow work instructions correctly.
• Ensure staff are trained in all operational procedures and that procedures are updated on the portal when needed.
• Ensure staff are updated and focused on the relevant DGB Brand objectives.
• Ensure a positive working environment for everybody in the team.
• Recruitment and relevant training of staff when required.
• Monitor employee performance against established standards.
• Oversee staff roster and proper rotation with sufficient breaks in shifts.
• Manage overtime within legal parameters and budgets.
• Manage staff KPA’s & assessments.
• Compile training matrix and content for training & keep updated.
• Manage shift rosters and overtime within budget and legal parameters.
• Deal with and address customer complaints and implement corrective action.
