5* Lodge seeks a Sommelier.

Purpose:

To utilize his/her expertise in wine and beverages to enhance the dining experience.

To educates guests and staff alike on the merits of different wines and vintages.

 

Scope of work:

  • Hosting the guests with the company's Standards of Excellence
  • Carrying out assigned tasks effectively and efficiently
  • Work according to agreed rosters and work hours
  • Achieving service excellence though teamwork
  • Assist other staff especially your team members if your tasks are complete to provide the best possible service
  • From time to time you may be asked to carry out a task given to you by a superior, even though it may fall out of your general job description; It is expected that these tasks are part of the successful day to day operation  and will be conducted as such

 

Skills/Experience required:

 

  • Extensive knowledge of wine is a must. WSET Level 2 (or similar qualification) a minimum requirement.
  • Be able to present himself/herself professionally and confidently to the guests
  • Possess a natural sales ability in order to drive wine/beverage profits
  • A sensitive palette and extraordinary sense of smell is important
  • Knowledge of the operation of a hotel/lodge/restaurant
  • The ability to work as an individual and as a team
  • Physical in good shape as some physical work is required on a daily basis

 

Key responsibilities:

  • Responsible for the recommendation and sales of wines and other beverages to guests and the wine sales off premises.
  • Staying abreast of the latest trends in both the culinary, and wine and spirits world.
  • Being knowledgeable about different types and regions of wines
  • Maintain and update the wine and beverage lists. Ensure wines off critical age get sold. Establish sommelier recommendations. Check pricing is up to date. Creating a diverse menu of wines at price points for all diners.
  • Train front-of-house, bar staff, hosts and chefs about wine / wine matching.
  • Work with Head Chef on menu and ingredients which are wine friendly.
  • Carry out monthly stock control, inventory. Update continuously all stock forms.
  • Make sure wines get returned to suppliers and credits issued for corked and spoiled wines.
  • Responsible for the cigar collection. Know and recommend offering. Responsible for the handling and maintenance of the cigars and the humidors. Monthly inventory and stock control of cigars.
  • Suggest wine related items which could be sold in the Gallery and restaurant.
  • Hosting and attending wine-tasting events and tours.
  • Cultivating relationships with distributors and vintners.
